Recipe Instructions
water 278g (of total 428 rest made up of carrot purée150g
add sugar syrup and sodium lactate to lye when it cools
oils lye
Strained lye into oils
at trace add carrot purée (170g)
at medium trace set to cook for 45 min up to 86 C
remove from heat cool to 77C add yoghurt
green silicone inset mould
